Spicy Thai Oat Bites
Crispy, spicy, and savory, these Thai-inspired oat bites are perfect as a snack or appetizer.
Ingredients
- β2 cups Rolled oats
- β1/4 cup Chopped fresh cilantro
- β1/2 cup Diced red onion
- β2 Diced fresh chili
- β1/4 cup Crushed peanuts
- β2 tablespoons Coconut oil
- β2 tablespoons Soy sauce
- β1 tablespoon Honey
- β1 tablespoon Lime juice

1. Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

2. In a large bowl, mix together oats, cilantro, onion, chili, peanuts, and a pinch of salt.

3. In a small bowl, mix together coconut oil, soy sauce, honey, and lime juice.

4. Pour the wet ingredients over the dry ingredients and mix until everything is well coated.

5. Use your hands to shape the mixture into small balls, about 1 inch in diameter.

6. Place the balls onto the prepared baking sheet, leaving about 1 inch of space between each bite.
