Malaysian Spicy Chicken Satay
A classic Malaysian dish with marinated chicken, grilled to perfection. Serve with spicy peanut sauce.
Ingredients
- β1 pound chicken breastcut into skewer size pieces
- β2 tablespoons coconut oilfor grilling
- β1/2 cup spicy peanut saucesee below for recipe
- β2 tablespoons crumbly soy saucegluten-free
- β2 tablespoons grated gingerfor marinade
- β1 clove garlicminced for marinade
- β2 tablespoons lime juicefor marinade
- β1 tablespoon brown sugarfor marinade
- β10-12 skewerssoaked in water for 30 minutes

1. In a blender or food processor, combine spicy peanut sauce ingredients and blend until smooth.

2. In a large bowl, whisk together coconut oil, crumbly soy sauce, grated ginger, garlic, lime juice, and brown sugar.

3. Add the chicken to the marinade and mix until coated. Cover and refrigerate for at least 2 hours or overnight.

4. Preheat grill to medium-high heat. Thread the marinated chicken onto the skewers.

5. Grill the chicken for 5-7 minutes per side, or until cooked through.
