Spiced Egyptian Chicken Casserole
A flavorful and aromatic casserole dish featuring chicken, spices, and a medley of Middle Eastern flavors.
Ingredients
- β1 1/2 pounds boneless, skinless chicken breastcut into 1-inch pieces
- β2 tablespoons spiced egyptian seasoning
- β1 cup casserole rice
- β1 medium diced onion
- β1 medium diced bell pepper
- β1 can (14.5 oz) canned diced tomatoes
- β1 cup chicken broth
- β1/2 cup crushed feta cheese
- β1/4 cup chopped fresh parsley

Preheat oven to 400Β°F (200Β°C).

In a large skillet, heat 2 tablespoons of oil over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes.

Remove chicken from skillet and set aside.

In the same skillet, add diced onion and bell pepper and cook until tender, about 5 minutes.

Stir in spiced egyptian seasoning, casserole rice, diced tomatoes, and chicken broth.

Bring to a boil, then reduce heat to low and simmer for 5 minutes.

In a large mixing bowl, combine cooked chicken, rice mixture, and feta cheese. Mix well.

Transfer mixture to a 9x13 inch baking dish and top with chopped parsley.

Cover with aluminum foil and bake for 25 minutes.
