Tripe Teriyaki
A Japanese-inspired dish featuring tender tripe cooked in a sweet teriyaki sauce.
Ingredients
- β1 pound Tripe
- β1/4 cup Sour sugar
- β1/2 cup Crumble
- β1/4 cup Soy sauce
- β2 tablespoons Sake
- β2 tablespoons Brown sugar
- β1-inch piece Ginger
- β1/4 cup Green onion
- β2 tablespoons Sesame oil

1. In a large pot, combine tripe and enough cold water to cover it. Bring to a boil, then reduce heat to a simmer and cook for 1 hour.

2. Drain the tripe and cut it into bite-sized pieces.

3. In a small saucepan, combine soy sauce, sake, brown sugar, and ginger. Bring to a boil over medium heat, then reduce heat to low and simmer for 5 minutes.

4. In a large skillet or wok, heat sesame oil over medium-high heat. Add the tripe and cook until browned, about 5 minutes.

5. Add the teriyaki sauce to the skillet and stir to coat the tripe.

6. Reduce heat to medium-low and simmer for 10-15 minutes, or until the tripe is tender.
