Welsh Rarebit Frittata
A French twist on the classic Welsh dish, this frittata combines the rich flavors of rarebit with the simplicity of a French omelette.
Ingredients

- β1 cup rarebitWelsh rarebit sauce
- β2 tablespoons mirinsweet Japanese cooking wine
- β1/4 cup honthinly sliced Welsh bacon
- β1/2 cup sour creamto taste
- β1/2 cup crispy onionsfor garnish
- β2 tablespoons chopped parsleyfor garnish

Preheat oven to 375Β°F (190Β°C).

Whisk eggs in a bowl and season with salt and pepper.

In a skillet, cook the hon over medium heat until crispy.

Add the mirin and cook for 1 minute.

Pour in the whisked eggs and cook until the edges start to set.

Transfer the skillet to the preheated oven and cook for 8-10 minutes.

Remove from the oven and stir in the rarebit sauce.
