Mexican Pilaf Bowl
A flavorful and spicy Mexican-inspired pilaf dish made with Spanish rice, onions, and spices. Serve as a main course or side dish.
Ingredients

- β1 medium Onionchopped
- β4 Soft tortillasfor serving
- β1 cup Pilaf
- β1 tsp Cuminground
- β1 tsp Chili powderground
- β1 can Tomatoesdiced
- β1 cup Shredded cheeseoptional
- β1 cup Beansoptional
- β1 cup Salsaoptional

Heat 2 tablespoons of oil in a large skillet over medium-high heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the cumin and chili powder and cook for 1 minute, stirring constantly.

Add the Spanish rice and cook for 2-3 minutes, stirring frequently.

Add the pilaf and cook for 2-3 minutes, stirring frequently.

Add the diced tomatoes, shredded cheese, beans, and salsa (if using). Stir to combine.

Season with salt and pepper to taste.

Serve the pilaf mixture in a bowl and top with additional shredded cheese, beans, and salsa (if desired).

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
