Herbal Chicken Tagine
A traditional North African stew originating from Algeria, made with chicken, herby spices, and festive vegetables.
Ingredients
- β1.5 lbs chicken breastsboneless, skinless
- β2 tsp tagine spice blendstore-bought or homemade
- β1 cup algerian olivessliced
- β2 festive bell peppersany color
- β2 sprigs herbal thymefresh
- β1 cup snappy carrotssliced
- β2 cups chicken broth
- β2 tbsp olive oil

Heat the olive oil in a large clay or ceramic tagine over medium heat.

Add the sliced onions and cook until softened, about 5 minutes.

Add the sliced bell peppers and cook for another 5 minutes.

Add the chicken breasts and cook until browned on all sides, about 5-7 minutes.

Add the tagine spice blend, olives, thyme, and chicken broth.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes.

Add the sliced carrots and continue to simmer for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
