Keto Smoky Syrian Eggplant Casserole
A flavorful casserole made with smoky eggplant, Syrian spices, and a hint of sweetness. Perfect for a low-carb keto diet.
Ingredients

- β1/4 cup Syrian olive oil
- β3 cloves garlicminced
- β1 pound ground beef80/20
- β1 tablespoon casserole seasoning
- β1 teaspoon salt
- β1/2 teaspoon black pepper
- β1 cup feta cheesecrumbled
- β1/4 cup chopped fresh parsley

Preheat oven to 400Β°F (200Β°C).

Cut the eggplant in half lengthwise and place on a baking sheet lined with parchment paper.

Drizzle the Syrian olive oil over the eggplant and sprinkle with casserole seasoning, salt, and black pepper.

Roast the eggplant in the oven for 20-25 minutes or until tender.

While the eggplant is roasting, cook the ground beef in a large skillet over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the minced garlic to the skillet and cook for 1-2 minutes or until fragrant.

Stir in the crumbled feta cheese and cook until melted.

Once the eggplant is done, let it cool slightly before slicing it into 1/2-inch thick rounds.

In a large baking dish, create a layer of the eggplant slices, followed by a layer of the meat mixture, and repeat until all ingredients are used, finishing with a layer of eggplant on top.

Cover the dish with aluminum foil and bake for 25-30 minutes or until the casserole is hot and the cheese is melted.
