Smoky Arabian Lamb Tagine
A classic Arabian dish made with tender lamb, smoky spices, and sweet preserved lemons.
Ingredients
- β1 (1.5 kg) lamb shoulder
- β2 tbsp smoky spice blend
- β2 tbsp saudi olive oil
- β1 large onion
- β3 cloves garlic
- β1 (100g) preserved lemon
- β1 cup chicken broth
- β2 tbsp date syrup
- β1 tsp flaky sea salt
- β1/4 cup fresh parsley
Instructions

Heat the oil in the bottom of a tagine over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the lamb and cook until browned on all sides.

Add the spice blend, broth, syrup, and salt.

Bring to a boil, then reduce heat to low and simmer, covered, for 1 1/2 hours.

Add the preserved lemon and simmer for another 10 minutes.

Garnish with parsley and serve hot.

Serve with couscous or rice, if desired.
