Smoky Millet Blinis
A French-inspired breakfast dish featuring smoky millet blinis with a hint of Russian flair.
Ingredients
- β2 cups Smoked millet flour
- β2 Large eggs
- β2 tablespoons Unsalted butter, melted
- β1 tablespoon Granulated sugar
- β1 tablespoon Russian honey
- β1 teaspoon Vanilla extract
- β1/4 teaspoon Salt
- β1 cup Greek yogurt
- β1 cup Fresh raspberries

Preheat a non-stick skillet or griddle over medium heat.

In a large bowl, whisk together millet flour, eggs, melted butter, sugar, Russian honey, vanilla extract, and salt.

The batter should still be slightly lumpy.

Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle.

Cook for 2-3 minutes or until bubbles appear on the surface and edges start to dry.

Flip and cook for an additional 1-2 minutes or until golden brown.
