Middle Eastern Roast Lamb
A flavorful roast lamb dish inspired by the rich flavors of the Middle East, perfect for a special occasion or holiday meal.
Ingredients
- ●1.5 kg Lamb shoulder
- ●2 tbsp Olive oil
- ●3 cloves Garlic
- ●2 tbsp Lemon juice
- ●1 tsp Salt
- ●1 tsp Black pepper
- ●1/4 cup Parsley
- ●2 sprigs Rosemary
- ●1 tsp Smoked paprika

Preheat oven to 220°C (425°F).

Rinse the lamb shoulder and pat it dry with paper towels.

In a small bowl, mix together olive oil, garlic, lemon juice, salt, black pepper, parsley, rosemary, and smoked paprika.

Rub the mixture all over the lamb shoulder, making sure to get some under the skin as well.

Place the lamb shoulder in a roasting pan and put it in the oven.

Roast the lamb for 20 minutes per kilogram, or until it reaches an internal temperature of 63°C (145°F) for medium-rare.

Remove the lamb from the oven and let it rest for 10-15 minutes before slicing and serving.
