Smoky Celeriac Tagine
A flavorful and comforting North African-inspired stew made with smoky roasted celeriac, aromatic spices, and a hint of sweetness.
Ingredients
- β2 smoky roasted red peppersdiced
- β1 large celeriacpeeled and diced
- β1/4 cup mediterranean olivespitted
- β2 tsp cuminground
- β1 tsp corianderground
- β1 tsp paprikasmoked
- β1/2 tsp saltto taste
- β1/4 tsp black pepperto taste
- β2 tbsp lemon juicefreshly squeezed
- β2 tbsp olive oilfor cooking
Instructions

Heat the olive oil in a large clay pot or Dutch oven over medium heat.

Add the cumin, coriander, and paprika. Cook, stirring constantly, for 1-2 minutes.

Add the diced celeriac and cook, stirring occasionally, for 5-7 minutes or until slightly tender.

Add the diced red peppers, olives, salt, and black pepper. Cook, stirring occasionally, for 5-7 minutes or until the celeriac is tender.

Stir in the lemon juice. Taste and adjust seasoning as needed.

Serve hot, garnished with fresh parsley or cilantro, if desired.
