Smoky Chicken Tagine
A flavorful and aromatic North African-inspired dish made with smoky chicken, roasted vegetables, and a blend of spices.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken thighsCut into 1 1/2-inch pieces
- β2 tablespoons Olive oilFor cooking
- β1 medium OnionChopped
- β2 medium CarrotsPeeled and chopped
- β2 Smoky roasted red peppersDiced
- β1 tablespoon Sesame seedsFor garnish
- β1 teaspoon Tagine spice blendStore-bought or homemade
- β1/2 teaspoon SaltOptional
- β1/4 teaspoon Black pepperOptional
- β1/4 cup Greek yogurtFor serving (optional)

Heat the olive oil in a large Dutch oven or saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped carrots and cook for an additional 5 minutes.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the diced red peppers, tagine spice blend, salt, and black pepper.

Stir to combine, then add 1 cup of water.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through.

Taste and adjust the seasoning as needed.

Serve the chicken and vegetables hot, garnished with sesame seeds and a dollop of Greek yogurt (if using).
