Roasted American Potato Bowl
A hearty vegetarian bowl filled with roasted potatoes and topped with smoky roasted vegetables.
Ingredients

- β1 cup Smoky Roasted Vegetablessuch as bell peppers and zucchini
- β2 tablespoons Olive Oilfor roasting
- βto taste Salt
- βto taste Black Pepper
- β1/4 cup Fresh Cilantrochopped

Preheat oven to 425Β°F (220Β°C).

Cut potatoes into 1-inch cubes and toss with olive oil, salt, and pepper on a baking sheet.

Roast potatoes in the oven for 20-25 minutes, or until tender and golden brown.

While potatoes are roasting, toss smoky roasted vegetables with olive oil, salt, and pepper on a separate baking sheet.
