Smoky Sweet Potato and Date Hash
A hearty, one-pot hash made with roasted sweet potatoes, caramelized dates, and a hint of smokiness.
Ingredients

- ●8-10 pitted dates
- ●1 tsp smoky paprika
- ●2 tbsp glazed irish
- ●2 tbsp stir-fry oilsuch as coconut or avocado oil

Preheat oven to 400°F (200°C).

Pierce the sweet potatoes several times with a fork and roast for 45-50 minutes, or until tender.

In a large skillet, heat the stir-fry oil over medium-high heat.

Add the glazed irish and stir constantly for 2-3 minutes, or until fragrant.

Add the roasted sweet potatoes and stir-fry for 2-3 minutes, breaking them up with a spatula.

Add the dates and smoky paprika, and stir-fry for an additional 2 minutes, until the dates are caramelized.
