Smoky Mediterranean Rice Bowl
A flavorful and nutritious bowl filled with smoky spices, fresh vegetables, and nutty pilaf.
Ingredients

- β2 tbsp olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 cup rice pilaf
- β1 cup diced tomatoes
- β1 medium chopped cucumber
- β1/4 cup crumbled feta cheese[optional]
- β1/4 cup chopped fresh parsley[optional]
- β salt and pepperto taste

Heat the olive oil in a large saucepan over medium heat.

Add the minced garlic and cook for an additional 1-2 minutes.
