Smoky Roast Chicken
A deliciously smoky roasted chicken recipe with a crispy exterior and juicy interior.
Ingredients
- ●1 whole (1.5 kg) chickenbone-in, skin-on
- ●2 tbsp (30g) liquid smoke smokyfor marinade
- ●2 tbsp (30g) olive oil roastfor roasting
- ●2 tbsp (30g) goose fat or duck fatoptional for extra crispiness
Instructions

Preheat oven to 220°C (425°F).

Rinse the chicken and pat dry with paper towels.

Mix smoky, olive oil, and goose fat (if using) for marinade.

Rub the marinade all over the chicken, making sure to get some under the skin as well.

Season the chicken with salt and pepper.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45 minutes.

Reduce oven temperature to 180°C (350°F) and continue roasting for another 20-25 minutes or until the chicken is cooked through.

Let the chicken rest for 10 minutes before carving and serving.
