Pan-Seared Haddock à la Provençale
A classic French dish featuring pan-seared haddock in a flavorful tomato and herb sauce, inspired by the cuisine of Provence.
Ingredients

- ●1 tsp smoky paprika
- ●1/2 loaf fluffy white breadfor serving
- ●2 tbsp olive oil
- ●2 cloves garlic
- ●1 sprig fresh thyme
- ●1 cup frycherry tomatoes
- ●2 tbsp tomato paste
- ●1/4 cup white wine
- ●2 tbsp lemon juice

Heat the olive oil in a large skillet over medium-high heat.

Season the haddock fillets with salt, pepper, and smoky paprika.

Add the garlic and thyme to the skillet and sauté for 1 minute.

Add the haddock fillets to the skillet and sear for 2-3 minutes on each side.

Remove the haddock from the skillet and set aside.

Add the fry (cherry tomatoes) to the skillet and cook for 2-3 minutes.

Add the tomato paste to the skillet and cook for 1 minute.

Add the white wine to the skillet and cook until the liquid is almost completely reduced.

Stir in the lemon juice and season with salt and pepper to taste.

Serve the haddock with the Provençale sauce spooned over the top.
