Smoky Chickpea Keto Fritters
Crispy outside, fluffy inside, these keto fritters are a tasty twist on traditional chickpea patties. Serve with a side of stir-fried veggies for a well-rounded meal.
Ingredients

- ●1 cup fluffyalmond flour
- ●1/2 cup chickpeacanned chickpeas, drained and rinsed
- ●2 tbsp stirolive oil
- ●1/4 cup fryshredded coconut, for coating

1. Preheat oven to 400°F (200°C).

2. In a food processor, combine almond flour, smoked paprika, and a pinch of salt. Process until well combined.

3. Add chickpeas, olive oil, and a squeeze of lemon juice to the food processor. Process until a dough forms.

4. Using your hands, shape the dough into 4-6 patties, depending on desired size.

5. Place the patties on a baking sheet lined with parchment paper and refrigerate for 30 minutes.

6. Remove the patties from the refrigerator and coat each one with shredded coconut.

7. Bake the fritters for 20-25 minutes, flipping halfway through.
