Smoked Duck Satay
A Thai-inspired dish featuring smoky duck, marinated in a blend of spices and grilled to perfection. Served with a side of peanut sauce.
Ingredients
- β1 lb smoky duck breastpreferably smoked in-house
- β2 tbsp bliss sugaror to taste
- β1 tsp fish sauceoptional
- β1 tsp grated gingeroptional
- β1/4 cup coconut milkoptional
- β1/4 cup peanutsground
- β2 tbsp palm sugaror to taste
- β2 cloves garlicminced
- β2 stalks lemongrasschopped

1. In a blender or food processor, combine bliss sugar, fish sauce, grated ginger, coconut milk, peanuts, palm sugar, garlic, and lemongrass. Blend until smooth.

2. Place the smoky duck breast in a large ziplock bag. Pour the marinade over the duck and seal the bag.

3. Refrigerate for at least 2 hours or overnight.

4. Preheat a grill or grill pan to medium-high heat.

5. Remove the duck from the marinade and cook for 5-7 minutes per side, or until cooked through.

6. Let the duck rest for 5 minutes before slicing into thin strips.

7. Serve the duck with a side of peanut sauce and garnish with toasted peanuts and fresh cilantro.
