Smoky Chicken Quesadillas
A delicious Mexican-inspired dish filled with smoky chicken, crunchy vegetables, and gooey cheese, all wrapped inside a crispy quesadilla.
Ingredients
- β1 pound Boneless, skinless chicken breasts
- β1 Large onion
- β1 Large bell pepper
- β2 teaspoons Smoked paprika
- β1 teaspoon Cumin
- β4 Quesadilla shells
- β2 cups Shredded cheese

1. Heat 1 tablespoon of oil in a large skillet over medium-high heat.

2. Add the chicken to the skillet and cook until browned, about 5-7 minutes.

3. Add the onion and bell pepper to the skillet and cook until the vegetables are tender.

4. Stir in the smoked paprika and cumin, and cook for 1 minute.

5. In a separate pan, warm the quesadilla shells over medium heat.

6. Spoon the chicken and vegetable mixture onto half of each quesadilla, and top with shredded cheese.

7. Fold the quesadillas in half and cook for 2-3 minutes, or until the cheese is melted and the tortillas are crispy.
