Smoky Spanish-Style Chorizo Fried Rice
A spicy and savory twist on traditional Chinese fried rice, featuring smoky chorizo and caramelized onions.
Ingredients
- β1/2 pound, sliced smoky chorizoSpanish chorizo adds a deep, smoky flavor to this dish
- β1 cup caramelized onionsslow-cook onions in a pan until they're dark and caramelized
- β2 cups cooked spanish ricepreferably leftover or day-old rice
- β bowla large bowl to toss and serve the fried rice
- β2 tablespoons vegetable oiluse for stir-frying
- β2 tablespoons soy sauceadds depth and umami flavor
- β1/4 cup, chopped scallionsoptional garnish
- β1 teaspoon sesame oiladds a nutty, aromatic flavor
- βto taste saltseason with salt to bring out flavors
- βto taste black pepperfreshly ground pepper adds a nice kick
- β1 eggcracked and beaten for scrambling

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced chorizo and cook until browned, about 2-3 minutes. Remove from the pan and set aside.

Add the remaining 1 tablespoon of vegetable oil and scramble the beaten egg until cooked through. Remove from the pan and set aside with the chorizo.

Add the caramelized onions to the pan and stir-fry for 1 minute.

Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry for 2-3 minutes, until the rice is heated through and starting to brown.

Add the cooked chorizo and egg back into the pan, stirring to combine with the rice.

Add the soy sauce, sesame oil, salt, and black pepper to the pan, stirring to combine.

Transfer the fried rice to a large bowl and garnish with chopped scallions, if desired.
