Smoked Aubergine Curry
A flavorful Indian-inspired dish featuring roasted aubergine smoked to perfection.
Ingredients
- β1 medium aubergine
- β1 cup wood chips smoke
- β2 tbsp ghee or oil toasted
- β1 tsp cumin
- β1 tsp coriander
- β1/2 tsp turmeric
- β1/2 tsp garam masala
- βto taste salt
- β1/4 tsp chili powder
- β1/4 cup fresh mint leaves

Preheat your grill or grill pan to medium heat.

Smoke the aubergine by placing it over the wood chips for 30 minutes, turning occasionally.

Remove the aubergine from the heat and let it cool.

Once cooled, peel the aubergine and chop it into bite-sized pieces.

In a pan, heat 1 tablespoon of ghee or oil over medium heat.

Add cumin, coriander, turmeric, garam masala, and chili powder. Cook for 1 minute.

Add the chopped aubergine to the pan and cook for 5 minutes.

Stir in the remaining 1 tablespoon of ghee or oil and season with salt to taste.

Garnish with fresh mint leaves and serve.
