Tunisian Apricot Tagine
A traditional North African stew originating from the city of Tunis, typically made with meat or vegetables. Here's a vegetarian version featuring sweet apricots.
Ingredients
- β2 cups, chopped apricots
- β2 teaspoons smoke paprika
- β2 cups hot water
- β2 tablespoons tunisian olive oil
- β1, chopped onion
- β3 cloves, minced garlic
- β1 teaspoon cinnamon
- β1 teaspoon, ground ginger
- βto taste salt
- βto taste black pepper

Heat the oil in a large clay pot or Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the chopped apricots, paprika, cinnamon, ginger, salt, and pepper. Stir to combine.

Add the hot water and bring to a boil.
