Slovakian Smoked Italian Confit Chicken
A unique Italian-inspired dish featuring smoked chicken confit with a hint of Slovakian flair.
Ingredients
- β1.5 pounds whole chickenbone-in, skin-on
- β1 cup smokesmoking chips or liquid smoke
- β2 hot peppersoptional
- β1/4 cup olive oilfor brushing chicken
- β1/2 cup confitstore-bought or homemade
- β2 teaspoons saltfor seasoning
- β1 teaspoon pepperfor seasoning

Preheat smoker to 225Β°F (110Β°C).

Season the chicken with salt and pepper.

Place the chicken in the smoker and cook for 4 hours.

Every hour, brush the chicken with olive oil and sprinkle with hot peppers (if using).

After 4 hours, remove the chicken from the smoker and let it rest for 30 minutes.

Shred or chop the chicken and mix with confit.

Return the chicken mixture to the smoker and cook for an additional 30 minutes.

Transfer the chicken to a serving dish and garnish with sliced oranges.
