Korean BBQ Pork Stew
A hearty and flavorful Korean-inspired stew made with tender pork and a sweet, spicy sauce. Serve over steamed rice for a comforting meal.
Ingredients
- β1.5 pounds Pork shouldercut into 1-inch cubes
- β2 teaspoons Korean chili flakesalso known as gochugaru
- β2 tablespoons Brown sugaror to taste
- β2 tablespoons GochujangKorean chili paste
- β2 tablespoons Soy sauceor to taste
- β2 tablespoons Rice vinegaror to taste
- β3 cloves Garlicminced
- β1-inch piece Gingergrated
- β1/4 cup Green onionschopped, for garnish
- β1 teaspoon Smoked paprikaoptional

1. In a large Dutch oven, brown the pork in hot oil over medium-high heat, until browned on all sides.

2. Remove the pork from the pot and set aside.

3. In the same pot, add more oil if necessary, and cook the garlic and ginger until fragrant.

4. Add the Korean chili flakes, brown sugar, gochujang, soy sauce, and rice vinegar to the pot, and cook for 1-2 minutes, until the sauce is thickened.

5. Add the pork back to the pot, and simmer for 20-25 minutes, or until the meat is tender.

6. Season with smoked paprika, if using.
