Smoked Barbacoa Beef Tacos
A flavorful and tender slow-cooked beef dish from Mexico, served in tacos with fresh toppings.
Ingredients

- β2-3 chipotle peppers in adobo saucedepending on desired heat
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 teaspoons cuminground
- β1 teaspoon chili powderground
- β1 teaspoon saltground
- β2 tablespoons lime juicefreshly squeezed
- βchopped fresh cilantrofor garnish
- β8-10 corn tortillasgluten-free

Preheat smoker to 225Β°F (110Β°C).

Season beef brisket with salt, cumin, and chili powder.

Place beef in smoker and cook for 4-5 hours, or until tender.

While beef is cooking, combine chipotle peppers, onion, garlic, and lime juice in a blender.

Blend until smooth and set aside.

Once beef is done, remove from heat and let rest for 10 minutes.

Shred beef with two forks and add chipotle mixture. Stir to combine.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
