Chickpea Tagine
A slow-cooked Indian-inspired stew made with chickpeas, onions, and spices, perfect for a comforting meal.
Ingredients
- β1 can (14 oz) chickpeas
- β1 large onion
- β3 cloves garlic
- β1 piece (about 1 inch) ginger
- β1 tsp cumin
- β1 tsp coriander
- β1/2 tsp cayenne pepper
- β2 tbsp tomato paste
- β1 can (14 oz) coconut milk
- β2 tbsp olive oil
Instructions

Heat oil in a large saucepan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and ginger and cook for 1 minute.

Add cumin, coriander, and cayenne pepper and cook for 1 minute.

Stir in tomato paste and cook for 1 minute.

Add chickpeas, coconut milk, and vegetable broth. Bring to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes or until the flavors have melded together.
