Thai Beef Stew
A flavorful and comforting Thai-inspired beef stew made with tender beef, vegetables, and aromatic spices.
Ingredients
- β1 pound Beefsirloin or chuck, sliced
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 inches Gingersliced
- β2 tablespoons Red Curry PasteThai red curry paste
- β1 can Coconut Milk14 oz, full-fat coconut milk
- β2 tablespoons Fish SauceThai fish sauce
- β2 tablespoons Soy Saucelow-sodium soy sauce
- β1 tablespoon Brown Sugarbrown sugar
- β1/4 cup Thai Basilchopped fresh Thai basil

1. Heat oil in a large Dutch oven or heavy pot over medium-high heat.

2. Add the sliced beef and cook until browned, about 3-4 minutes.

3. Remove the browned beef from the pot and set aside.

4. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 3-4 minutes.

5. Add the sliced ginger and cook for 1 minute.

6. Add the red curry paste and cook for 1 minute, stirring constantly.

7. Add the coconut milk, fish sauce, soy sauce, and brown sugar to the pot. Stir to combine.

8. Return the browned beef to the pot and bring the mixture to a simmer.

9. Reduce the heat to low and let the stew simmer, covered, for 2-3 hours, or until the beef is tender.
