Braised Pork Ragu with Italian Spices
A hearty, slow-cooked Italian-inspired dish featuring tender pork in a rich, flavorful ragu. Perfect for a cozy dinner.
Ingredients
- β1 1/2 pounds pork shouldercut into 2-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 stalks celerychopped
- β1 can, 28 oz chopped tomatoescrushed by hand
- β2 tablespoons italian seasoningdried oregano, basil, and thyme
- β1 teaspoon salt
- β1/2 teaspoon black pepper
- β2 tablespoons olive oil

Heat oil in a large Dutch oven over medium-high heat.

Brown pork cubes on all sides, about 5 minutes. Remove pork from pot and set aside.

Reduce heat to medium and add chopped onion to pot. Cook until softened, about 5 minutes.

Add minced garlic and cook for 1 minute.

Stir in chopped carrots and celery and cook for 2 minutes.

Add crushed tomatoes, Italian seasoning, salt, and black pepper. Stir to combine.

Return pork to pot and bring mixture to a simmer.

Cover pot and transfer to preheated oven at 300Β°F (150Β°C). Braise for 2 1/2 hours, or until pork is tender.

Remove pot from oven and let rest for 10 minutes before serving.

Serve ragu hot, garnished with chopped fresh parsley if desired.
