Mexican Cauliflower Bowl
A flavorful and healthy Mexican-inspired cauliflower bowl recipe, perfect for a quick and easy dinner.
Ingredients
- β1 head cauliflower
- β2 tbsp silkytahini or sesame paste
- β1 tsp middle easterncumin
- β1 tsp easterncoriander
- β1 bowllarge ceramic or wooden bowl
- β2 lightsalt-free seasoning blend

Preheat the oven to 425Β°F (220Β°C).

Rinse the cauliflower head and remove the leaves and stem.

Cut the cauliflower into florets and place them on a baking sheet.

Drizzle with 1 tablespoon of silky (tahini) and toss to coat.

Sprinkle with 1/2 teaspoon of middle eastern (cumin) and 1/2 teaspoon of eastern (coriander).

Toss to coat evenly.

Bake in the preheated oven for 20-25 minutes, or until tender and lightly browned.

Meanwhile, prepare the bowl by placing a layer of cauliflower florets in the bottom.
