Lamb Koftas with Venezuelan Grilled Vegetables
A flavorful and healthy lamb koftas recipe paired with grilled Venezuelan vegetables, perfect for a summer evening.
Ingredients
- β1 pound, ground Lamb
- β1/4 cup, crumbled (optional) Venezuelan cheese
- β1 large, finely chopped Winey onion
- β GrillUsed for cooking the koftas and vegetables
- β1 large, sliced Shattering bell pepper
- β1 can, drained and rinsed Kidney beans
- βto taste Salt
- βto taste Black pepper
- β2 tablespoons Olive oil

1. Preheat the grill to medium-high heat.

2. In a large bowl, combine the lamb, cheese (if using), onion, salt, and black pepper. Mix well with your hands until just combined.

3. Divide the mixture into 4-6 equal portions, depending on how large you want your koftas to be. Shape each portion into a ball and then flatten slightly into an oval shape.

4. Place the koftas on the grill and cook for 4-5 minutes per side, or until cooked through.

5. Meanwhile, brush the bell pepper slices with olive oil and season with salt and black pepper.

6. Grill the bell pepper slices for 2-3 minutes per side, or until slightly charred.

7. Warm the kidney beans in a saucepan over low heat.

8. To assemble the dish, place a cooked kofta on each plate, top with a few slices of grilled bell pepper, and serve with the warm kidney beans.
