Thai Stir-Fried Eggplant
A flavorful and spicy Thai-inspired stir-fry made with eggplant, a blend of herbs, and your choice of protein, all prepared in just a few minutes.
Ingredients
- β1 large Eggplant
- β1 cup Protein of choice (chicken, shrimp, tofu)
- β2 tablespoons Vegetable oil
- β3 cloves Garlic
- β1 tablespoon Ginger
- β2 tablespoons Thai red curry paste
- β2 tablespoons Savory sauce (or gluten-free stir-fry sauce)
- β1/4 cup Fresh cilantro
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the protein of choice and cook until browned, about 3-4 minutes.

Add the garlic and ginger and cook for 1 minute, until fragrant.

Add the Thai red curry paste and cook for 1 minute, until fragrant.

Add the eggplant and cook for 3-4 minutes, until tender.

Add the savory sauce and stir to combine.

Reduce heat to medium-low and simmer for 2-3 minutes.
