Peruvian Vegan Causa Rellena
A Peruvian-style potato and plantain dish filled with a savory vegan filling, perfect for a delicious and satisfying meal.

- ●3 cloves garlicminced
- ●1 medium tomatodiced
- ●1 can lima beansdrained and rinsed
- ●2 tbsp savory Peruvian savory spice blend
- ●2 tbsp vegan mayonnaisefor the filling
- ●chopped fresh cilantrofor garnish

1. Preheat the oven to 400°F (200°C).

2. Pierce the potatoes and plantains with a fork a few times and bake for 45-50 minutes, or until they're tender.

3. Scoop out the flesh of the potatoes and plantains and mash them together in a bowl.

4. In a pan, heat some oil and sauté the onion, garlic, and tomato until softened.

5. Add the lima beans, savory spice blend, and vegan mayonnaise to the pan and stir to combine.

6. Add the sautéed mixture to the mashed potatoes and plantains and stir to combine.

7. Scoop the mixture into a serving dish and chill in the refrigerator for at least 30 minutes.
