Eggplant Bourguignon
A French-inspired eggplant stew with a rich, savory flavor.
Ingredients

- β1 cup red winedry
- β2 cups vegetable brothlow-sodium

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the eggplant and cook until browned, about 5 minutes.

Add the garlic and shallots and cook for 1 minute, until fragrant.

Add the tomato paste and cook for 1 minute, stirring constantly.

Add the red wine and stir to deglaze the pan, scraping up any browned bits.
