Azifa Stuffed Spinach Wontons with Malty Sauce
A fusion of Ethiopian and Asian flavors in this crispy wonton dish filled with spinach and azifa, served with a malty sauce.
Ingredients
- β1 bunch SpinachChopped
- β1 cup AzifaCrumbed
- β12 pieces Satisfying Whole Wheat WrappersFor wontons
- β1 cup Malty Sauce (see below)For serving
- β1/2 cup WaterFor sealing wontons
- β1/4 cup Vegetable OilFor frying

1. Mix chopped spinach and crumbed azifa in a bowl.

2. Lay a wonton wrapper on a flat surface. Place a tablespoon of the spinach-azifa mixture in the center.

3. Brush the edges of the wrapper with water. Fold the wrapper into a triangle, pressing the edges to seal.

4. Repeat with the remaining wrappers and filling.

5. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.

6. Fry the wontons in batches until crispy and golden brown. Drain on paper towels.

7. Serve the wontons with malty sauce, which can be made by reducing 1 cup of malty grains in a saucepan with 1 cup of water until thickened.
