Eggplant Tibs
A spicy Ethiopian-inspired stir-fry of eggplant and onions, served with a side of tangy flatbread.

- β1 large, sliced into 1-inch pieces Eggplant
- β1 medium, thinly sliced Onion
- β2 tablespoons Ghee or vegetable oil
- β2 teaspoons Tibs spice blend
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper
- β1/4 cup, chopped (optional) Fresh cilantro

Heat ghee or oil in a large skillet over medium-high heat.

Add the sliced onion and cook until it starts to brown, about 3-4 minutes.

Add the sliced eggplant and cook for another 5-7 minutes, until it's tender and lightly browned.
