Satay Couscous Bowl
Inspired by Malaysian flavors, this satay couscous bowl is a hearty and flavorful meal.
Ingredients
- β2 tablespoons Malaysian satay spice mix
- β1 tablespoon Gooey honeyfor serving
- β1 cup Couscous
- β1 pound Salty chicken breast
- β2 tablespoons Vegetable oil
- β1 Red onion
- β1 Bell pepper
- β1/4 cup Fresh cilantro
- βto taste Salt
- βto taste Black pepper

1. In a large bowl, whisk together satay spice mix and vegetable oil.

2. Add chicken breast to the bowl and marinate for at least 30 minutes.

3. Preheat grill or grill pan to medium-high heat.

4. Grill chicken for 5-6 minutes per side, or until cooked through.

5. Meanwhile, cook couscous according to package instructions.

6. Heat a tablespoon of oil in a pan over medium heat.

7. Add sliced red onion and bell pepper and cook for 3-4 minutes.

8. Fluff cooked couscous with a fork and add to the pan with onion and pepper.

9. Stir in chopped cilantro and season with salt and pepper to taste.

10. Slice grilled chicken into thin strips and serve over couscous mixture.
