Pierogi Ruskie
Traditional Ukrainian potato and cheese dumplings. A classic comfort food.
Ingredients
- β1 package Rustic Ukrainian DoughAvailable in most European markets
- β2 large Russet PotatoesPeel and grate
- β1 cup Farmers CheeseAvailable in most European markets
- β1 medium OnionChop finely
- β1 tablespoon Fresh DillChopped
- βto taste Salt
- βto taste Black Pepper

1. In a large mixing bowl, combine grated potatoes, farmers cheese, chopped onion, chopped fresh dill, salt, and black pepper.

2. Mix well to combine.

3. Divide the rustic Ukrainian dough into small pieces.

4. Roll out each piece into a thin circle.

5. Place a tablespoon of the potato and cheese mixture in the center of each dough circle.

6. Fold the dough over the filling to form a half-circle shape, and press edges together to seal.

7. Bring a large pot of salted water to a boil.

8. Carefully add the pierogi to the boiling water.

9. Cook for 5-7 minutes, or until the pierogi float to the surface.

10. Remove from water with a slotted spoon, and serve with your favorite toppings.
