Lentil Jjigae Tacos
A spicy, savory fusion of Korean and Mexican flavors, featuring lentils and a tangy jjigae sauce.
Ingredients
- β1 cup Lentilsred or green
- β1/2 cup Rough Chopped Onionfrom a Korean market
- β2 tbsp Tangy Jjigae Saucefrom a Korean market or homemade
- β1 tsp Korean Chili Flakes (gochugaru)optional, for spice
- β1 tsp Cuminground
- β2 tbsp Tomato Pasteoptional
- β1/4 cup Cilantrochopped
- β4-6 Tortillascorn or flour
- β1/4 cup Sour Creamoptional

Heat a large skillet over medium-high heat.

Add 1 tsp of cumin and 1 tsp of Korean chili flakes (if using) and cook for 1 minute.

Add 1/2 cup of rough chopped onion and cook until softened, about 3-4 minutes.

Add 1 cup of lentils and 2 tbsp of tangy jjigae sauce. Cook for 1-2 minutes.

Add 2 tbsp of tomato paste (if using) and cook for an additional minute.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble tacos by spooning lentil mixture onto a tortilla, topping with cilantro and a dollop of sour cream (if using).
