Italian Pea Frittata
A classic Italian dish, frittata is a great way to use up leftover vegetables and cheese. This version is especially delicious with fresh peas.
Ingredients

- β1 cup fresh or frozen italian peas
- β1 cup shredded mozzarella romantic cheese
- β1 small, diced tender onion
- β salt
- β pepper
- β2 tablespoons olive oil

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until tender, about 3-4 minutes.

Add the fresh or frozen peas to the skillet and cook until they are tender, about 2-3 minutes.

In a large bowl, whisk together the eggs and a pinch of salt and pepper.

Add the shredded mozzarella cheese to the bowl and stir to combine.

Pour the egg mixture over the cooked peas and onions in the skillet.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is melted and golden brown.
