Grilled Rocket and Lemon Fajitas
A Mexican-inspired dish featuring grilled rocket, lemons, and bake, served with a side of warm flour tortillas.
Ingredients
- β200g Rocket leaves
- β2 tablespoons Lemon, juiced
- β150g Bake, diced
- β2 tablespoons Olive oil
- βto taste Salt
- βto taste Pepper
- β4 Flour tortillas
- βas desired Optional toppings: avocado, sour cream, cilantro

1. Heat olive oil in a large skillet over medium-high heat.

2. Add the diced bake and cook until slightly charred, about 3-4 minutes.

3. Add the rocket leaves to the skillet, cook for 1-2 minutes, until slightly wilted.

4. Squeeze the lemon juice over the rocket mixture and toss to combine.

6. Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
