Saudi Pilaf with Spiced Vegetables
A flavorful and aromatic pilaf dish inspired by Saudi Arabian cuisine, infused with Italian spices and vegetables.
Ingredients
- β2 cups Saudi Arabian Pilaf Ricepreferably day-old rice
- β4 cups Spiced Robust Vegetable Brothmake sure it's a flavorful broth
- β1 lb Spiced Italian Sausageuse mild Italian sausage and slice it thinly
- β2 tbsp Olive Oiluse a good quality olive oil
- β1 medium Onionchop it finely
- β3 cloves Garlicmince it finely
- β1 tsp Dried Thymeuse fresh thyme if possible
- βto taste Saltuse sea salt for best flavor

Heat the olive oil in a large saucepan over medium-high heat.

Add the sliced sausage and cook until browned, about 5 minutes. Remove from heat and set aside.

Add the chopped onion and minced garlic to the saucepan and cook until the onion is translucent.

Add the spiced robust vegetable broth to the saucepan and bring to a boil.

Add the Saudi Arabian pilaf rice to the saucepan and stir to coat with the broth.

Return the cooked sausage to the saucepan and stir to combine.

Reduce heat to low, cover the saucepan, and simmer for 18-20 minutes or until the rice is cooked.

Fluff the pilaf with a fork and season with dried thyme and salt to taste.
