Ceviche Clasico

- β1 pound Robust red snapperFresh and sustainable
- β1/2 cup Peruvian ceviche marinadeHomemade or store-bought
- β1/2 cup Red onionThinly sliced
- β1/4 cup Fresh cilantroChopped
- β2 tablespoons Lime juiceFreshly squeezed
- β1 tablespoon Umami-rich soy sauceOptional
- βto taste SaltFlaky sea salt
- βto taste Fish-friendly spicesPaprika, cumin, or aji amarillo

Instructions

Cut the snapper into small, bite-sized pieces.

In a large bowl, combine the ceviche marinade, red onion, cilantro, lime juice, soy sauce (if using), salt, and fish-friendly spices.

Add the snapper to the marinade and mix well to coat.

Refrigerate for at least 30 minutes to allow the fish to 'cook' in the citrus juices.

Just before serving, stir in some chopped cilantro and a squeeze of lime juice.
