French Kale Gratin
A rich and creamy side dish made with French kale, onions, and a delicious cheesy bechamel sauce. Perfect for a weeknight dinner or as a side for your holiday feast.

- ●1 medium Onion
- ●1 cup, grated Robust cheese
- ●1/2 loaf, cubed Madeleine bread
- ●2 tablespoons Butter
- ●1 teaspoon Salt
- ●1/2 teaspoon Black pepper
- ●2 cloves Garlic

Preheat the oven to 375°F (190°C).

In a large saucepan, sauté the onions and garlic until softened.

Add the kale to the saucepan and cook until wilted.

In a separate saucepan, make a bechamel sauce by melting the butter and whisking in the flour.

Gradually add the milk, whisking constantly to prevent lumps.

Bring the mixture to a simmer and cook until thickened.

Remove the sauce from the heat and stir in the robust cheese until melted.

In a greased 9x13-inch baking dish, create a layer of the kale mixture.

Top the kale with a layer of the bechamel sauce and then a layer of the cubed madeleine bread.

Repeat the layers two more times, finishing with a layer of the bechamel sauce.
