Robust Poutine Fritters
A twist on the classic Canadian dish, these fritters are made with robust mushroom duxelles and crispy poutine bits.
Ingredients
- ●1 cup, finely chopped robust mushrooms1/2 cup for duxelles
- ●1/2 cup, finely chopped shaggy mushrooms
- ●1 cup, crumbled canadian poutine
- ●1/2 cup, finely chopped onion
- ●1/2 cup all-purpose flour
- ●1 large beaten egg
- ●1/2 cup grated cheddar
- ●to taste salt
- ●to taste black pepper

Preheat oven to 400°F (200°C).

In a skillet, sauté the chopped onion until translucent. Set aside.

In the same skillet, add the chopped robust and shaggy mushrooms. Cook until they release their liquid and start to brown.

Stir in the crumbled poutine and cook until it's lightly toasted.

In a bowl, whisk together the flour, egg, and grated cheddar. Add the cooked mushroom mixture and stir until combined.

Season with salt and black pepper to taste.

Using a 1/4 cup measuring cup, scoop the mixture into balls and flatten slightly into patties.

Heat about 1/2 inch of oil in a skillet over medium heat. Fry the patties until golden brown and crispy, flipping halfway through.

Transfer the fritters to a baking sheet and bake in the preheated oven for 10-12 minutes, or until cooked through.
