Malaysian-Style Chicken Satay
A popular Southeast Asian dish of marinated chicken grilled to perfection and served with spicy peanut sauce. Perfect for a quick dinner or as an appetizer.
Ingredients
- β1 pound Chicken breastCut into skewer-sized pieces
- β1/2 cup Coconut milkFor marinade
- β2 tablespoons Vegetable oilFor grilling
- β2 tablespoons Lime juiceFor marinade
- β2 inches GingerSliced
- β2 cloves GarlicMinced
- β2 tablespoons Peanut butterFor peanut sauce
- β2 tablespoons Soy sauceFor marinade
- β1 tablespoon Brown sugarFor marinade
- β1 cup Satay sauceFor serving (store-bought or homemade)

In a blender or food processor, combine coconut milk, lime juice, ginger, garlic, soy sauce, and brown sugar. Blend until smooth.

Add the chicken to the marinade and mix until coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.

Preheat grill to medium-high heat. Thread the marinated chicken onto skewers.

Grill the chicken for 5-7 minutes per side, or until cooked through.

In a small saucepan, combine peanut butter, 2 tablespoons of water, and 1 tablespoon of soy sauce. Whisk until smooth.

Serve the grilled chicken with peanut sauce, satay sauce, and your favorite sides, such as rice or vegetables.
