African Noodle Stir Fry
A spicy and flavorful stir fry inspired by Kenyan cuisine, featuring the bold flavors of African vermicelli noodles.
Ingredients
- β8 oz Vermicelli noodlespreferably African-style
- β1 cup Ricewhite or brown
- β2 tablespoons Robustchili pepper paste
- β1 teaspoon Kenyancurry powder
- β2 tablespoons Vegetable oilor other oil of choice
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 medium Carrotspeeled and chopped
- β1 medium Bell peppersany color, chopped
- β1 tablespoon Soy sauceoptional

Heat oil in a large pan over medium-high heat.

Add onion and garlic and cook until softened, about 3-4 minutes.

Add carrots and bell peppers and cook for an additional 4-5 minutes.

Add robust and Kenyan and stir to combine.

Add noodles and stir to coat with the spice mixture.

Cook for 2-3 minutes, until noodles are well combined with the spices.
