Venezuelan Stew
A hearty and flavorful stew originating from Venezuela, perfect for a cold evening. This recipe is a variation with added roasted and pistachio notes.

Ingredients
- β2 large Roasted sweet potatoes
- β2 tablespoons Venezuelan sofritoavailable at most Latin American grocery stores
- β1 medium Onion
- β1 medium Red bell pepper
- β2 cloves Garlic
- β1 can Canned tomatoes14.5 oz
- β4 cups Vegetable broth
- β2 tablespoons Pistachio pestosee note
- βto taste Salt and pepper

Heat oil in a large pot over medium heat. Add sofrito and cook for 1-2 minutes.

Add onion and red bell pepper. Cook until tender, about 5 minutes.
