Vegan Paella with Padron Peppers
A twist on the classic Spanish dish, made without any animal products. This vegan paella is packed with the smoky flavor of padron peppers and the crunch of roasted peppers.
Ingredients
- β1 cup sliced Padron Peppers
- β1 cup sliced Roasted Peppers
- β3 cloves Garlic
- β1 teaspoon Smoked Paprika
- β1/2 teaspoon Vegan Saffron
- β1 cup Vegan Paella Rice
- β1 cup Chickpeas
- β1 cup Tomato
- β2 cups Vegan Broth
- β2 tablespoons Olive Oil

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the sliced garlic and cook for 1-2 minutes until fragrant.

Add the sliced padron peppers and cook for 2-3 minutes until slightly charred.

Add the smoked paprika and vegan saffron and cook for 1 minute.

Add the vegan paella rice and stir to coat the rice in the spice mixture.

Add the chickpeas, tomato, and vegan broth to the pan and stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes.

Add the sliced roasted peppers to the pan and stir to combine.

Continue to simmer for an additional 5-10 minutes until the rice is tender and the liquid has been absorbed.
